I have always been fascinated by my grandmother's ability to prepare awesome dishes from Tuscan tradition, always with few, simple but precious ingredients. That cultural heritage was in danger of disappearing: I spent a lot of time cooking with her, trying to learn her recipes and secrets. In the end, I realized that she had given me a bigger gift: I had assimilated her cooking philosophy! Then, I realized that tradition is not a dusty book but a living thing able also to adapt to new conditions, and even improve. I studied ingredient's seasonality, their sustainable production systems, new cooking techniques, techniques of tasting: almost without realizing it, in the meantime, I became Chef and finally, also Sommelier. The tasting of the five wines and their combinations will be presented and served in our equipped and comfortable tasting room, where all our guests, even if spaced and safely, can enjoy a convivial and unique experience! For all those who have particular diets or intolerances, upon notice at the time of booking in the "notes" field, we are able to meet most dietary needs. The price of the tasting includes everything: tasting, water and food pairings. The structure of the Rocca di Montestaffoli does not provide bar service (coffee, tea, soft drinks, spirits, packaged foods, etc.) It is also possible to participate in the tasting with children, for them our staff will prepare a selection of gastronomic excellences at a cost of € 8 per child.Remember that by law it is forbidden to administer alcohol to minors.

We are in the heart of Famous and traditional Chianti hills with breathtaking views. We are only 18 km from Florence, Fattoria Lavacchio, practice Organic and Biodinamic agriculture in whole estate. Visit the unique wind mill designed by LEONARDO DA VINCI, renovated to produce the flour of the Estate and the unique sensation to come back to 2 centuries ago. The tour includes a walk in the olive groves, a little introduction to the Tuscan olive oil traditions and a guided tour of the wind mill as well as an historical background of the wind mill, it’s renovation and technical explanations of how it works. To finish off, there is a course on olive oil tasting where you will learn the characteristics of good extra virgin olive oil. Wheelchair is not accessible only on the second floor in the wind mill, but all the rest of activity is no problem. Driver from Florence city and back not included in the price. We will meet in Piazza Garibaldi, next to the statue of the same name, where our local guide will be waiting for us. We will start walking through the streets of the historic center, in search of the more traditional flavors of local cuisine ... How about a platter of Tuscan cheeses and cold cuts with a good Spritz? We will taste these delicacies in one of the oldest wine bars in Pisa! Of course, not even a portion of cecina can be missing, a very thin focaccia prepared with chickpea flour, a real must of Pisan gastronomy and the típical pizza we made in the city which is different from other places in Italy. During the tour we will discover restaurants known only by the locals, where we will be delighted by the typical dishes of the gastronomy of Pisa, such as the pappa al pomodoro pasta típical of the city. Everything with a good glass of wine or an artigianal beer.
